Industrious, aren't I?

So I have been deciding to be more self sufficient. I've been dehydrating vegetables that I can buy really cheap in bulk, I'm going to experiment with making jerkies, and I'm learning to bake bread. I haven't baked bread in a long time, since high school in fact. So, I'm a bit rusty. I made this recipe. It really is pretty easy. Just time consuming as all bread recipes are. the thing is, it came out kind of doughy, not light and fluffy like breads are supposed to be. It tastes good though. My question is, did I not let it rise long enough? Did I not bake it long enough? I put it back in the oven for 10 minutes when I realized it was doughy, but it didn't help. Any suggestions?
Since I [posted last, I have made 2 hats and I'm finishing another baby blanket, and about 1/4 of the way thorough with another blanket. And Q is going to be a vampire for Halloween.

Good luck on the bread making. I tried my hand at it last year, and did ok. I have a recipe on the fridge to make some bagels that one of these weekends I want to try. But I am no baker and it is so time consuming.
Hope the hats are going well, post some pics when you can.
